Spicy Potato Soup

I found this soup recipe several years ago and it is one of my absolute favorites.  It tastes delicious with some warm french bread or cornbread muffins.  Enjoy!

Serves: 6-8
Ingredients
  • 1 pound ground beef
  • 4 cups cubed potatoes cut into ½ inch cubes
  • 1 small onion, chopped
  • 1 teaspoon minced garlic
  • 3 (8 oz.) cans tomato sauce
  • 1 (15 oz.) can petite diced tomatoes
  • 4 cups water
  • 2 teaspoons salt
  • 1½ teaspoons pepper
  • 1 teaspoon Mrs. Dash Original Seasoning
  • ½ or 1 teaspoon hot pepper sauce (or cayenne pepper)
Instructions
  1. In Dutch oven or large pot, brown until crumbly ground beef with onion and garlic. Drain off grease.
  2. Add water, tomato sauce, salt, pepper, Mrs. Dash seasoning and hot pepper sauce
  3. Stir in potatoes and petite diced tomatoes and bring to a boil.
  4. Reduce heat and simmer for 1 hour or until potatoes are tender and the soup has thickened.
  5. Add parsley flakes for garnish.
