Spanish Skillet Supper 30 Minute Meal

In my family we love almost anything with ground beef.  This one pot meal is so simple to make and yummy in the tummy.  My family loves it and I can cook it in 30 minutes.  We like it to eat it with cornbread or on a flour tortilla.  Tortilla chips would be a great side also.  Print the recipe below.

This recipe has been handed down to me from my sweet mother-in-law.  She said she found it on the back of the Spanish Rice packet many years ago.  Just goes to show us that those recipes the companies put on the back of the package or box become family favorites for years to come.  🙂  I’ve just added a few more ingredients like chopped onion, minced garlic and chunky picante sauce for added flavor.

First you start by browning ground beef in a skillet.  I usually add chopped onion and minced garlic to my beef recipes.  The mixture of the onion and garlic give it a flavor we like.

While my meat is browning I cook the Spanish Rice according to package directions in a separate pot.

I add corn, ranch style beans, picante sauce and stir to mix well. Top with cheese and additional salsa. Delicious!

Ingredients
  • 1 lb. ground beef
  • 1 cup chopped onion
  • 2 tsp. minced garlic
  • 1 pkg. Spanish rice
  • 1 can ranch style beans
  • 1 can corn, drained
  • 1 cup chunky picante sauce
  • shredded cheese
Instructions
  1. Brown ground beef in skillet with chopped onion and minced garlic, drain.
  2. Prepare rice according to package directions.
  3. Add ranch style beans, corn, picante sauce and rice and combine well, heating thoroughly.
  4. Top with shredded cheese.
  5. Serve on flour tortillas, with cornbread or tortilla chips.
  6. Freezes well.
