This one pot meal is delicious to serve anytime of the year. Serve with cornbread, on flour tortillas or with tortilla chips.
- 1 lb. ground beef
- 1 cup chopped onion
- 2 tsp. minced garlic
- 1 pkg. Spanish rice
- 1 can ranch style beans
- 1 can corn, drained
- 1 cup chunky picante sauce
- shredded cheese
- Brown ground beef in skillet with chopped onion and minced garlic, drain.
- Prepare rice according to package directions.
- Add ranch style beans, corn, picante sauce and rice and combine well, heating thoroughly.
- Top with shredded cheese.
- Serve on flour tortillas, with cornbread or tortilla chips.
- Freezes well.
