This frosting is so worth the time it takes to make it. Delicious on any kind of cake but especially on red velvet or chocolate.
- 1½ (8-ounce) packages cream cheese, softened (I used 2 whole pkgs. for the 3-layer cake)
- ½ cup butter, softened
- 2 (4-ounce) white chocolate baking bars (I used Ghirardelli) melted and cooled
- 1½ cups powdered sugar
- 2 teaspoons vanilla extract
- 2 teaspoons fresh lemon juice
- Beat cream cheese and butter at medium speed in electric mixer until fluffy
- Add cooled white chocolate, beating until blended
- Gradually ad powdered sugar, beating until smooth. (scrape down sides as needed)
- Add vanilla and lemon juice, beating until blended
- Cover and chill for 45 minutes or until spreading consistency
