White Chocolate Frosting

This frosting is so worth the time it takes to make it. Delicious on any kind of cake but especially on red velvet or chocolate.
Ingredients
  • 1½ (8-ounce) packages cream cheese, softened (I used 2 whole pkgs. for the 3-layer cake)
  • ½ cup butter, softened
  • 2 (4-ounce) white chocolate baking bars (I used Ghirardelli) melted and cooled
  • 1½ cups powdered sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons fresh lemon juice
Instructions
  1. Beat cream cheese and butter at medium speed in electric mixer until fluffy
  2. Add cooled white chocolate, beating until blended
  3. Gradually ad powdered sugar, beating until smooth. (scrape down sides as needed)
  4. Add vanilla and lemon juice, beating until blended
  5. Cover and chill for 45 minutes or until spreading consistency
